Chicken burrito bowl, the freshness they come with and the amazing taste and flavors that you can get with mixing a couple of ingredients has swept me off my feet and i finally decided to make it at home.

After reading and searching for recipes in the blogsphere, I found something that was simple to reproduce, just to at least test that whether I want to spend $8 on a bowl of food buying it or rather I can make it happen in my own kitchen.
Hence I made a little trip to near by grocery store and bought a few items.
- Black Bean
- Chipotle Hot Salsa (store bought)
- Firm Tofu (the recipe says Tofu is a decent substitute for meat)
Its 9pm, and I timed myself to prepare this meal in 45 minutes, and I almost succeeded. Except I could not use black bean, and I used the Navy White Beans instead.
Bring 1 cup of Sona masoori rice with 3 cups of water to boil, and filter the starch when it was 70% done. While the rice is cooking, I cut 1/2 of tofu to 1″ inch cubes to make approximately 20 cubes. In a pan, add 2 tbps of oil, add tofu pieces, add garlic salt, sprinkle red chilli powder and oregano over it and shallow fry for 8-9 minutes.
While the stove is busy cooking, I opened up a can of beans, rinsed well into a microwave bowl mixed with a dash of chilli powder and microwaved for 2 minutes. Cut 1/3 of lime for fresh juice and handful of cilantro leaves finely chopped.
Once the rice is done, fork it and add 2 tbps of butter and cilantro leaves and mix well.
In a bowl, add some rice, top it with beans and fried tofu or chicken, 2 tbps of salsa and some lettuce. Mix well and enjoy.

Though I liked the burrito bowl, but the taste of the salsa was too sour and smoky for me and not exactly like the one in chipotle.
Hence during my next home made burrito bowl makeover, I am going to try the below recipe to make fresh salsa:
1 Tomato, peeled and gutted of most seeds/juice.
10-15g powdered chile de arbol or chipotle peppers (whichever is cheaper)
2 tablespoons of fresh cilantro.
1 tablespoon lemon juice.
1/4 cup red onion.
1 lime of lime juice.
1 tablespoon kosher salt.
1 teaspoon pepper.
Put all ingredients into a blender or food processor and blend to desired consistency. For best taste allow to sit, covered, in refrigerator for 24 hours.
OR Another variation would be
Open 2 small cans of La Costena Chipotle Peppers in Adobo Sauce and tomato sauce.
Pour into blender.
Add 1 teaspoon garlic, freshly minced or powdered.
Add 1 teaspoon dried oregano.
Blend until pureed and smooth. Serve and enjoy the addictive flavor
AND definitely stir-fry the beans and some corn and green pepper and onions.
