Spinach in its whole form is just amazing with the nutrients and the freshness it carries. I love my spinach cooked into this simple curry.
Weather during the last 2 days have been better and it reminded me of summer and all the gardening i can do, and eating fresh veggies out of my garden patch, instead that energy I had transformed into this dish in my kitchen.
Wash about 2 bunches of baby spinach, stems out and coarsely chopped
3 cloves of garlic pods
1 big onion sliced
5-6 red chillies
mustard + jeera seeds
In a wide pan add oil + mustard + jeera seeds, add the red chillies and onions + garlic and fry for 4 minutes. Add the spinach and saute for 10 minutes until the spinach is cooked and all the water is evaporated. Add salt to taste and garnish with a handful of fresh coconut flakes.
